Here is a guide to the measurements used on this site. There is also a list of ingredient substitutes if you ever find you have run out.

MEASURING TIPS:

Dry ingredients like flour and sugar should be measured in dry measuring cups, not in liquid cups. Although the both hold the same volume, a liquid measuring cup does not allow you to level the surface of the contents to get exact measurements.You can measure liquids in a dry measuring cup but it is difficult to fill it to the rim and decant without spills.

SUBSTITUTES:

Baking powder,  1 teaspoon 1/2 teaspoon baking soda + 1/2 teaspoon cream of tartar
Butter,  1 cup 1 cup margarine or 1 cup shortening + 1/4 teaspoon salt
Cocoa,  1/4 cup 1 square unsweetened chocolate (1 ounce – oz)
Cream (half & half),  1 cup 7/8 cup milk + 1 tablespoon butter
Self-raising Flour,  1 cup 7/8 cups all purpose flour + 1/2 teaspoon baking powder +1/2 teaspoon salt
Garlic,  1 clove 1/8 teaspoon garlic powder
Mayonnaise, 1 cup 1 cup sour cream
Sour cream, 1 cup 1 cup plain yogurt
Vinegar, 1 teaspoon 1 teaspoon lemon or lime juice

 

MEASURE GUIDE:

A pinch 1/8th teaspoon
3 teaspoons 1 tablespoon
2 tablespoons 1/8 cup
4 tablespoons 1/4 cup
8 tablespoons 1/2 cup
12 tablespoons 3/4 cup
16 tablespoons 1 cup
1 oz 2 tablespoons
8 oz 1 cup
16 oz 1 pound (lb)
1 cup of liquid 1/2 pint
2 cups 1 pint
2 pints 1 quart
4 quarts 1 gallon

 

EQUIVALENTS:

bacon, cooked 1 slice 1 tbsp crumbled
banana 1 medium 1/2 cup pureed
beans, dried 1 cup 2 cup cooked
brocolli, frozen 10 ounces 1 1/2 cups chopped
cheese, cream 8 ounces 1 cup
cheese, hard 4 ounces 1 cup grated
cheese, semi soft 4 ounces 1 cup shredded
corn, frozen 10 ounces 1 3/4 cups
eggs, large 1 dozen 2 1/3 cups
whole flour, all purpose 1 pound about 3 1/2 cups
garlic 1 med clove 1/2 tsp minced
lemons 1 medium 3 tbsp juice
limes 1 medium 1 -2 tbsp juice
mushrooms 1 pound 5 cups sliced
onions 1 pound 4 medium, 3 1/2 tp 4 cups chopped
pasta, elbow macaroni 1 cup 1 3/4 cups cooked
potatoes 1 pound 3 1/2 to 4 cps chopped; 2 cups mashed
sugar, confectioners 1 pound about 3 3/4 cups
sugar, granulated 1 pound 2 1/4 to 2 1/2 cups
tomatoes 1 pound 3 medium; 1 1/2 cups chopped
